QSR vs FSR vs fast casual

A QSR (quick service restaurant) is a restaurant where guests order and pay at a counter, kiosk or app and get their food fast with no table service, and an FSR (full service restaurant) is one where staff take the order and serve it at the table. Fast casual sits between them: counter ordering, food made to order, a higher bill. The labels are conventions, not legal categories, so two data sources can put the same restaurant in different boxes.

Who means what by QSR by role

RoleWhat the split means to them
Category managerDifferent packs and serves: fountain and cans in QSR, bottles and draught in FSR
Field sales repQSR chains buy centrally, so the rep's work is independents; FSR owners decide on site
DistributorQSR chains often run on dedicated supply contracts; FSR orders come through broadline wholesale
eCommerce managerQuick service venues are the most likely to be on delivery apps; full service listings are fewer and menus shorter
POS-system vendorQSR needs speed, kiosks and drive-through; FSR needs tables, tabs and split bills

Who means what by QSR by region

    RegionUsual words
US and CanadaQSR, limited service, fast casual, family dining, casual dining, fine dining
UK and IrelandQSR, fast food, food to go, casual dining, branded restaurants
    FranceRestauration rapide vs restauration traditionnelle
GermanySystemgastronomie (chain catering, QSR and chain casual dining together) vs Individualgastronomie
Asia PacificQSR, F&B, hawker stalls (Singapore), cloud kitchens (India)

    Common confusions

    • QSR is not chain. An independent kebab shop is quick service; a chain steakhouse is full service. Ownership is a separate field (independent vs chain).
    • Fast casual moves. Some sources count it as QSR, some as its own segment, some as restaurants.
    • Cafes and bakeries sit in QSR in US reports and in cafes in most European ones.
    • Pubs with kitchens are full service in a US scheme and bars and pubs in a UK one.
    • QSR, LSR, limited service. US statistics say limited service, an energy drink brand says LSR (limited service restaurant), most of the trade says QSR. Same box, three labels.

    How Dashmote classifies it

We give each venue one channel from a fixed list (restaurants, quick service, cafes, bars and pubs, hotels) based on what it serves and how it trades, the same way in all 60+ countries, so channel totals add up and compare across markets (channel mapping). Chain or independent is a separate field, so "independent quick service" and "chain full service" are both valid segments.

Worked example one street, two schemes

Poke bowls made to order at a counterFast casualQuick service
Pizzeria with table serviceCasual dining (FSR)Restaurant
Pub with a kitchenFull serviceBar and pub
    Bakery cafeQSRCafe

Five venues: the US scheme says 2 QSR, 1 fast casual, 2 full service; the five-channel scheme says 2 quick service, 1 restaurant, 1 bar and pub, 1 cafe. Before comparing two reports, map one scheme onto the other.
